Enlightenment Wines (http://enlightenmentwines.com/)

Honey’s is the tasting room and cocktail bar for New York City’s first meadery: Enlightenment Wines. Enlightenment Wines makes mead- or honey wine from locally sourced and foraged ingredients. These are dry wines are made without grapes-instead we ferment a combination of artesian well water, honey, herbs and fruit in a method of manufacturing that goes back tens of thousands of years. Enlightenment Wines started in the Hudson Valley on a family farmstead in 2009 but recently moved to Brooklyn where it built a second winery and tasting room Honey’s. At Honey’s you can try our mead in the context of other curated beverages from around the world, watch us do production and take home a bottle to go.

Tim O’Neal, BoroughBees (http://www.boroughbees.com/)

Tim explains why he started BoroughBees.com: “I’ve been keeping bees for over 20 years and I’m still learning. I started BoroughBees.com in 2010 as a way to share the knowledge I’ve accumulated and the learning experiences I’ve had (and continue to have) along the way. I want to help make beekeeping fun and accessible for anyone willing to try it, so I focus on writing accessible and (hopefully) enjoyable posts covering all aspects of beekeeping. In partnership with the Added Value Farm in Red Hook, Brooklyn, I host hive inspections and seminars. In addition to beekeeping, I also teach biology at NYC high schools and universities.”
